DI.VINO Monferrato Rosso DOC
GRAPES: Barbera 70% and Cabernet Sauvignon 30%
The Cabernet Sauvignon grapes, subjected to summer thinning and subsequent late harvest, are left to dry in special boxes for about a month.
Then follows fermentation with maceration in contact with the skins; the resulting wine is then assembled with Barbera and begins maturing in small French oak barrels, which will last about six months.
Intense on the nose with a bouquet of dried fruit and red fruit jam.
In the mouth it is intense and full-bodied, harmonious and slightly sweet. (her ville jeg sige: dejligt rund!)
Excellent with game of all kinds, it pairs well with robust meat dishes and with medium-high aged and blue cheeses.
